Have you ever visited an apple orchard in the fall? Fallen fruit scatters the ground, wide span branches decorated in color stretch overhead, bees zip and flit high on sugar, and the air envelopes you in an embrace of ripened fruit.
Growing up, I neighbored an abandoned orchard. Weekly, I would gather fruit making plans of slow-cooked Apple Butter, Roasted Granny Smith Apples with Butternut Squash, Apple Turkey Burgers and my favorite Tuna Salad recipe with apples and pickles.
Nutrient-dense apples provide a healthy-punch per serving, giving validity to the “apple a day” adage. High in fiber and rich in antioxidants, they also have a fair amount of fructose, the naturally occurring sugar found primarily in fruit. Therefore, it’s best to eat them raw and unpeeled.
